Roasted Brinjal Raitha

Description:A raitha combining yougurt and the smoky flavour of roasted brinjal.
Preparation Time: 15 mins



Brinjal 1 (roasting type)
Sweet curd 1½ cups
Green Chilli - 3 finely cut
Coriander leaves(finely cut) 2 tablespoons
Curry Leaves - 4-5
Salt to taste
Cooking oil - 2 tablespoon


Coconut oil 2 teaspoons
Mustardseeds ½ teaspoon
Blackgram dal ½ teaspoon
Red Chilli - 1 small
Methi seeds - 1 pinch


1.Apply little oil over the brinjal and roast over the flame.Cool and scoop out the pulp and keep aside.
2.Beat the curds lightly,add the brinjal pulp and salt and mix well.
3.Heat the oil and add the methi seeds first then the mustardseeds,when it starts to crakle, add the blackgram dal and red chilli.
4.When the blackgram dal is golden brown, add the finely cut green chilli,coriander leaves and the curry leaves.
5.Add the above mixture to the curd mixture mix and serve.
