Coriander Rice

Description:A nice flavoured rice with coriander leaves.
Preparation Time:25 mins

MAIN INGREDIENTS:

Raw rice - 1 cup
Fresh coriander leaves - 1 cup(finely cut)
Tomato puree - ½ cup
Fried gram - 3 tablespoons
Dessicated coconut - 4 tablespoons
Cashewnuts - 15
Ghee – 4 tablespoon
Turmeric powder – ¼ teaspoon
Salt - to taste

FOR THE POWDER:

Coriander seeds – 1 tablespoons
Poppy seeds(khus-khus) – 1 tablespoon
Black pepper corns – 15
Cumin seeds –¼ tablespoon
Fennel seeds(sonf) – ½ tablespoon
Red chillis – 4
Heat 1 tablespoon oil and fry the above ingredients for 3-4 mins add the dessicated coconut and fried gram and powder finely.

METHOD:

1.Add one and a half cup of tomato water and half a cup of tomato puree to the rice and cook taking care that the cooked grains should be separate.
2.Heat 2 tablespoons of ghee and fry the cashewnuts and keep aside.
3.In the same oil add 1 teaspoon of mustard and when it splutters add the cooked rice,turmeric powder,salt,the ground powder,ghee, cut coriander leaves and mix thoroughtly.
3. Leave it on a slow flame for some time stirring off and on.
4.Remove from the fire and garnish with fried cashewnuts.
