Carrot Payasam

Description:A sweet dish made with milk and carrots.
Preparation Time: 25 mins

INGREDIENTS:

MAIN:

Fresh carrots(grated) – 4 big
Milk(boiled and reduced to 4 cups) – 6 cups
Cashewnut paste – 3 tablespoons
Cardamom powder – ½ teaspoon
Saffron(soaked in little milk) – few strings
Sugar – 1 ½ to 2 cups
Ghee – 3 tablespoons

FOR GARNISHING:
Pista(crushed) - 1 tablespoon
Raisons - 1tablespoon

PREPARATION METHOD:

1.Heat the ghee in a pan, sauté the grated carrots for few minutes and then pressure cook for 5 minutes. Cool the carrots and blend in a mixie.
2.Mix together the blended carrots , milk and cashew paste in a vessel and boil, stirring it to prevent it from burning.
3.When it starts boiling remove from fire and add sugar,saffron and cardamom powder and stir well.
4.Allow it to cool a little,then garnish with pista and raisons.
5.Serve hot or cold.
