Vermicilli Payasam

Description:A sweet dish made with milk and Vermicelli.

INGREDIENTS:

MAIN:

Vermicelli(Semiya( ½ cup
Milk(boiled) 4 cups
Sugar 1½ cup
Cardamom powder - 1 teaspoon
Cashewnuts - 10
Raisans - 15
Orange food color - 2 pinches(dissolved in a little cold milk)
Saffron - a few strands(dissolved in a little cold milk)
Ghee 2 tablespoons

PREPARATION METHOD:

1.On a medium flame dry roast the vermicelli to a golden brown colour in a pan. Remove from the pan and spread it on a sheet of paper.
2.Fry the cashewnut and raisans in ghee and keep aside.
3.In the same pan add one cup of water and when it starts to boil add the fried vermicelli and allow it cook till tender adding some more water if necessary.
4.Add the milk and the orange food color and allow it boil for a few minutes.
5.Remove from the fire and add the sugar and mix thorougly and then add the fried cashewnuts and raisans,cardamom powder and the saffron strands.
